You know I am right here to help with any suggestions along the way. Dinner tonight may be right up your street. It’s a go to fave in our house:

Some cooking chorizo (as much as you care to taste)
2 x cans chopped tomatoes
2 x cans white beans
A big bunch of fresh basil or a big sprinkling of dried

Fry off the cooking chorizo in a casserole pot for a couple of mins, drain the white beans and add them to the pan, cooking with the chorizo for about a min. Pour over the two cans of chopped tomatoes and bring to the boil. Take pot off the hob and stir in basil. Pop the whole pot in the oven on 200 oC for 30 mins et voila. If I’m feeling flush I serve this as a side with a cod fillet or chicken breast but if the chips are down just have a larger portion and up the greens. It’s a seriously flavoursome dish and works brilliantly with broccoli, cabbage and peas on the side.

By: Kate http://www.mothersalwaysright.com/changing-habits-junk-challenge/#comment-63962 Tue, 22 Apr 2014 10:46:05 +0000 http://www.mothersalwaysright.com/?p=6596#comment-63962 Fajitas are always a winner in our house, mostly because it allows the Girls the chance to “do it themselves”…….You can make up a mixture of chicken breast, peppers, onion etc in fajita seasoning and serve it with wholemeal tortillas, extra fresh salad/veg and reduced fat sour cream/salsa etc – you can make some potatoe wedges to go with it too if you are feeling extra hungry?? Not complicated – without the wedges, the whole thing takes about 10-15 mins to throw together!
